Why just use the foot?  http://www.synthzone.com/bsynth.html profiles the Body Synth, which, amongst other things, might also be able to help disabled folks in the event someone writes some firmware to use MIDI to control artificial limbs and such.  It's been used in performance apparently by a number of artists, mostly in the SF area.
 
But theoretically who needs a footswitch when you've got this?
