My new (as of early this year) notebook came with Windows 7 Professional 
64bit pre-installed. This is now my #1 music performance computer.
As for drivers:
Devices which are still supported usually already supply Windows 7 
drivers, and with Windows 7 (contrary to XP), every device I saw offers 
both 32 and 64 bit drivers - so that old XP problem of having to check 
for availability of 64bit drivers seems to be a thing of the past. 
However, if you're using a discontinued interface from a manufacturer 
who doesn't do good support, checking beforehand might be a good idea. 
(Obviously, this is also true for any other hardware device - racing 
wheels or whatever you're also using).

My experiences so far have been good w/ Windows 7 - but then, I haven't 
yet put it under real stress. My recording session for "A tätowierte 
Katz'", however (http://bit.ly/d0PHAu) had me recording 17 tracks of 
audio, running The Grand 3 and getting 0.5ms latency using RME HDSP 
hardware under Windows 7 - if that is any indication of "quality"...
