That question can be answered with both Yes and No.

No. If you record in a lossless digital format the recording software
doesn't change the sound. "Lossless" means as good digital resolution
as the audio interface delivers.

Yes. The recording software will change the sound if any further
digital processing is done in the recording software. Example of such
further processing may be compressing, using EQ, adding reverb, mixing
the recorded instrument with other recorded instruments in a digital
summing process. All those DAW applications you mentioned use
different algorithms for processing digital audio and that makes they
sound a little different. But these differences are way less prominent
than the human factor in sound design, as what matters for the final
result.
