The iTouch sends OSC messages over WiFi to a Mac running OSCulator.
OSCulator converts OSC to MIDI to a virtual device.  Mobius opens virtual
device and receives MIDI.   Velcro the iTouch to your guitar.  Mayhem 
ensues.

Making this work with a PC seems to be a bit more hacky.  pd can do 
OSC to MIDI conversion but I haven't found anything as elegant as 
OSCulator.
