Some of my favorite music (at least heard live) has the following
properties:

1. It is very difficult to determine at any given moment what
the music is going to sound like one minute later.
2. At no point does a transition feel illogical or forced.
Indeed, at its best, there is no awareness of transition, just a
logical flow taking you to many different places.
