Yea, I hear you.  It is tricky.  Here are my thoughts:

1. Avoid a passive DI.  You really want a line level output before 
splitting.
2. Not familiar with the Rolls Red Square, but an active DI would be fine.
3. Two tube preamps?  That isn't necessary.  A single Tube MP with a 
Y-cable on the output would be sufficient.  I have a Presonus Blue Tube 
which is very similar and you can get a good guitar tone out of these.
4. Mackie mixer would do the job, but would be much larger than the other 
solutions and more expensive.
5. Pod XT would be fine.

The thing to do is examine how much money you want to spend and what 
features you need to get out of your setup.  Then choose the solution that 
best matches your needs and price range. You have mentioned several good 
solutions.  You just need to pick the one that works best for you.
