It is almost impossible to answer a question like "wouldn't it be
better to...". For me Paragon would not be better because I do a lot
of music productions that make use of tools that run under OS X or
Windows XP. And with the FAT Windows partition I can load the wave
files natively into any of my applications. This ensures a fast
workflow.

NTSF is a little more secure than FAT and more economic with disc
space, but none of those criteria bring any big deal into the music
production scenario.
